Henry Higgins Boiled Bagels is committed to bringing a traditional, NY style, boiled bagel back to the city of Portland. Formally of one of Portland's most beloved bagel operations we have a drive to bring back that level of quality. We started out renting a kitchen in SE Portland providing vegan bagels on a wholesale basis to three cafes in the neighborhood. We have since expanded to a larger kitchen and have over 15 retailers in the metro area. We utilize locally sourced ingredients whenever possible as well as sustainably grown flour. We focus on locally sourced ingredients, certified vegan sugar, and sustainably grown flour. Our bagels are produced fresh each day in small batches and hand-rolled. They are proofed for over 18 hours to ensure the integrity of a crusty exterior and a chewy interior.
